Used frequently on cuts of beef, but used it on this years roasted fresh turkey - came out beautifully browned, with a bit crispy skin , and with juicy tender breast meat. Spread light coating of olive oil and generous rub of the char crust all over. Stuffed with whole lemon, fresh thyme sprigs, rosemary from my garden and a half a sweet onion. Inserted two remote meat probes - one in the breast and the other in the thickest part of the thigh. The breast cooks faster than the dark meat and while most instruction tell you to cook until dark meat reaches 180, I pulled the bird when the breast meat was at 169 (165 preferred) and thigh at about 173.
