Like a lot of cooks out there I wanted to up grade my knives but of course balked at the price of 0+. I was delighted when I came across the very stylish looking Cangshan X Series. The reviews were glowing. I put the thing in my list and eventually bought it when the price dropped to .95. After owning and using the knife for several months Here is what I think. The knife is gorgeous and feels good in the hand. It has good balance and is not too heavy or too light (for me.) The knife is as one reviewer put it, "wicked sharp" out the box and I have found it stays sharp. The knife fails for me due the the curve of the blade. The knife does not have enough of I curve for me to lift and slide with the same motion I use for the other chef knives in my kitchen. This knife seemed more like a Santoku. It took my awhile to figure out how I had to use this knife while with even my crappy knives I had since forever, the motion is natural and fluid. How we got our start?
In 2015, after two years of research, development, samples, molds, and hundreds of hours of design, ideas became products and Cangshan Cutlery was born. The Cangshan logo was handwritten by Henry’s dad and his values and vision, passed down to his son, are the real spirit of everything we do.
